We are not talking about the great white wine of Orvieto,…. Thus it is also locally called that prized variety of beans that was grown in Orvieto from the end of the 1800s until the post-war period and that today, having become “Slow Food Presidium”, we want to recover by encouraging the recovery of production of this native legume with particular characteristics. It is in fact the “Second Bean of the Orvieto Plan”: a type of white bean that owes its name to the fact that it is of second sowing (sown in the summer after the wheat harvest) and that it is cultivated in the flat area along the Paglia river below the Orvieto cliff.
