Orvieto, as many cities in Umbria region, has a great tradition in the processing of pork meats and above all in the production of sausages and cured meats. Ham, salami, sausages, the typical “mazzafegate” and porchetta are a must of the classic local appetizer which is often served accompanied by the typical bland bread or the tasty “Torta al testo”: a sort of italian focaccia made with water and flour and cooked on fire over a stone support locally called “testo”.
